Extremely easy Sausage Roll-up

Ingredients: 1 package of Polish sausage cut into 4 links, 1 small bag of hash brown potatoes, 1 small onion, 4 tsps of cooking oil or butter, salt and pepper, 4 pieces of aluminum foil

Directions: Place 1 polish sausage link, 1/4 of the hash browns, 1/4 of the onion, and 1 tsp. of cooking oil or butter in a piece of foil. Fold it over and seal it and place it either on the grill or on the hot coals at the edge of your campfire for about 20 to 30 minutes. When it is done, salt and pepper to taste. Extremely easy and delicious to eat as a main dish.

Ham and Sweet Potato Foil packs

Cube ham and sweet potatoes, combine with 1/2 cubed apple. Place in foil pack, make sure the edges are sealed tight. Place on hot coals for 1/2 hour, turning every 15 minutes. Apples give moisture to the recipe instead of butter and it adds sweetness.

This amount feeds 1 - 2 people, double recipe for more people. Preparation time approximately 5 - 30 minutes.

Air Travel-UK to USA

Th EU has backed an Open Skies deal with the US. The unanimous vote by EU transport ministers will liberalise trans-atlantic aviation, easing restrictions on travel between Europe and the US. The deal may still collapse, however, over the US's usual protectionist stance on foreign ownership of US companies. They are insisting on a minimum of 75 percent US ownership of all US airlines. Should the deal go ahead, it could herald a new era of cheap trans-atlantic flights. It's a sad irony of US government ignorance that enforcing 75 percent US ownership could destroy some US airlines altogether if cheaper airlines can get a foothold on the lucrative transatlantic routes.

Didn't I promise you a photo of "Fred" the Pheasant?


Here is the photo of "Fred" the Pheasant we feed daily. He is beautiful and arrives every morning about 8:30 - 9:00 for his breakfast. My husband feeds him his corn breakfast and the other birds wait their turn. We are extremely interested in birds of all varieties, and we live out in the country where wild birds thrive. We are "bird watchers" who love to see how many different species we can find on a given day, week, or month.

We love the picture of the Black-capped chickadee bird, these birds are plentiful in Texas where I am from. We are now in East Yorkshire in the UK. We have different varieties of birds and we plan to write about Pheasants in our blog soon. We too are "nature lovers" like yourselves. Bird Watching at the Cabin

I decided today would be a good day to bird watch from the deck of our cabin. I pulled up a chair and got my camera ready. It was kind of nice to take a break from stressing over what hasn't been finished. (I think the electrician must double as a spy as he's been very elusive and I still don't have my switchplates. ) I hung up a suet cake and tube feeder on the trees overhanging the deck. The Black-capped chickadees were rampant. I put seeds in my hand and one of them landed on my thumb. He didn't take the seed, just cocked his head at me and flew back to the feeder. Just that experience was thrilling enough. Bird count total today: 10 chickadees, 1 tufted titmouse, 2 white breasted nuthatches and 1 hairy woodpecker. Tomorrow, back to the log cabin...
